[A shop run by a pastry chef with 25 years of experience]

As I sat down, I noticed a sign with a photo that read “Anniversary/Birthday Whole Cake.” Is this a restaurant? I asked the owner, and he answered with a smile, “Actually, I’ve been a pastry chef for 25 years.” The owner’s main job was originally making cakes and pastries. His long career as a pastry chef began with training under Iron Chef Hiroyuki Sakai. He learned French cuisine from the basics, but then became involved in the dessert department, which is essential to the final dish of a French meal. After that, he showed off his skills as a pastry chef in various places. When he returned to his hometown of Yanagawa, he thought, “I thought about opening a cake shop, but it’s difficult to do it alone. If I’m going to do it alone, I’ll go with cooking,” and opened his current shop, which focuses on cooking.

Since he started out in French cuisine, his cooking skills are solid. In just a short time, he quickly prepared a total of seven dishes for us, including three appetizers, tomato and whitebait bruschetta, sauteed chicken salad, special quesadilla salsa, various mushrooms stewed in cumin cream, and a birthday dessert plate, which surprised me. Making use of his previous profession, he has a great deal of freedom when it comes to the dessert menu. He makes his own parfaits and cakes without sourcing from other stores. As a result, he says he’s seeing an increase in customers who come just for the desserts.
