The store manager is a chicken professional who has many years of experience working in the meat processing industry and at a yakitori restaurant. “Chicken loses moisture over time, so time is of the essence. Only fresh chicken can taste good.”
The manager’s passion can be seen in the “three particularities” written on the menu: “We only use chicken that is slaughtered that morning. Our secret salt sauce is a recipe that has been passed down since the restaurant first opened. We stock the finest sake and shochu from all over Japan.” In order to carry out these “three particularities,” the manager lives in Kurume, close to his supplier, so he can purchase fresh chicken and have it delivered to his restaurant in Yanagawa.
By carrying out the strict self-imposed declaration, he has been gaining the support of yakitori-loving customers since opening in 2016. During the self-restraint period due to the COVID-19 pandemic, the number of regular customers who order takeout yakitori to enjoy at home has increased. Thanks to the manager’s cheerful personality, he works well with the staff. It is a lively restaurant.
