Hachizo Yume Mall Yanagawa store
[Eight points of emphasis on using local ingredients]
The restaurant’s pamphlet lists “eight particularities in the pursuit of deliciousness.” Of the ingredients used in the restaurant, the soy sauce is brewed in wooden barrels, and the yuzu kosho is produced in Okuyame. The eggs are “Japanese eggs” laid by chickens fed Yame tea. The rice is exclusively from contracted farmers in Saga. The restaurant adheres to a “regionalism” philosophy, serving local Yame sake and finishing the meal with Yame tea. Furthermore, the chicken broth is simmered for a long time, and the chicken is grilled over charcoal.
Recommended menu items include “Charcoal-grilled chicken thighs,” “Motsunabe,” and “Assorted 8 skewers of your choice.” In particular, the “Charcoal-grilled chicken thighs” are a dish that is grilled over a charcoal stove and can also be taken home.
This chain store, whose flagship store is in Yame City, opened in July 2014. As it is easy to park within the Yume Mall premises, it is popular not only with locals but also with businessmen who come to Yanagawa on business trips. Alcohol disinfection is provided at the entrance and staff temperatures are always taken. The store manager said, “We are careful about COVID-19 infection prevention measures. We are committed to safety and security, so we look forward to your visit.”
